Ok I will admit, there was a huge sale on pineapples this week and just like my mama, you cannot pass on a good sale. Hence another pineapple recipe this week. My mother was notorious for buying things on sale. What the heck, she loved that word: SALE. It was like someone just pour a pot of gold on the ground and she went running to grab as much as she could before it all disappeared. It was always funny to watch…let’s go pineapples!!!
I love to mix sweet and salty. I will often add a few raisins on my plate just to have that contrast (or sometimes cranberries). I was feeling a bit Hawaish and decided to create a fried rice dish with pineapples….enjoy!

- 2 cups smoked turkey sausage
- 4 eggs
- 2 cups chopped pineapples
- 1 cup onions
- 2 cups cooked rice (white or brown)
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
Cut sausage, pineapples and onions in small cubes. In a small bowl, beat eggs and set asideIn a large skillet, heat oil and cook sausage in medium high heat for 8 minutes or until browned. Add onions and cook for 5 minutes or until soft. Add pineapples and rice and cook for 1 minute. Lower heat. In a frying pan, heat butter and cook eggs. Pour over rice mix with salt and pepper and mix. Enjoy.
